What is Stevia and how can I use it?

What is Stevia?
Stevia is a natural sweetener from a plant coming from Paraguay originally, called Stevia rebuadiana bertoni. This plant is naturally sweet.



There are many natural sweeteners exist, and while each one is sweet, each one has a unique taste. As an example sugar tastes different from fructose, maple syrup is different than honey. Stevia is also a bit different from any of these. That is why you need to learn how to use it, so you get the right taste what you expect of your food or drink.



Why do we suggest the use of Stevia?
Stevia has no calory and almost zero carbohydrates, therefore anyone can consume it – even people suffering from diabetes or keeping a strict diet. You can use Stevia for sugarfree cookies, cakes, drinks, soups, salads – anything which is sweet and replace sugar with it.



What to do with your Stevia first?
When you purchase any Stevia product, you should taste it. Put a little bit (small pintch) into a cup of water and taste it. Then add a slightly bit more… and continue addig it until your water has a bitter-taste. Because of this bitter-taste you need to learn how to use Stevia. This website will help you with this.



What do you do if you feel some „aftertaste”?
Simply add a small amount of other natural sweetener (such as fructose, honey, maple syrup etc.) to your food or drink containing Stevia, and it will loose it’s aftertaste.
This happens because of the reaction between Stevia and other natural sweeteners.



Will Stevia loose it’s sweet taste after cooking?
No. Stevia’s molecules do not dissolve until 200 degrees of Celsius. Therefore you can cook or bake with it, the sweet taste will remain even at high temperature. (As a note, that is one difference between Stevia and artificial sweeteners which dissolve after 70-80 degrees of Celsius).



What should I use?
For cooking and baking we suggest Stevia powder to be used. Dissolve the powder in a half cup of water. A small pinch of Stevia powder equals to a spoonful of sugar. A big pinch is like a full cup of sugar.
Stevia tablettes are great for coffe and tea (easy to carry it with you all day in your bag or purse). Stevia syrup is good for cooking and baking altough it has a stronger after taste. It is also great to heal small cuts, pimples on face or handle stomach upset (put a few drops in a cup of water and drink it). The see-through Stevia liquid (called Fluid Nova) contains about 20% of Stevia and diluted with water. It has a nice and sweet taste but does not have the Stevia aftertaste. It is good for cooking and baking and we suggest it to people who never tried Stevia before.



What else should I know about Stevia?
The powder used for cooking is not going to make your pastry grow as sugar does. To handle this, add about 2 pinches of baking soda to your recipe, in addition to Stevia. This will make your pastry grow (muffin, bread, etc.).
