Pencake
Ingredients:
Pencake:
2 eggs
1 cup of milk
¾ cup of wholegrain spelt flour
2 teaspoon of coconut oil
Pinch of salt
2 small pinches of Stevia powder
Filling:
½ kg apple (pealed, cored and grated)
Ground cinnamon (to taste)
2 small pinches of Stevia powder (to taste)
1 tablespoon of Raw Honey
How to prepare:
Pencake:
1. In a large bowl, mix all the ingredients together with a mixer, on low degree. If the mixture has foam, let it sit for a few minutes.
2. Put the coconut oil onto the frying pan and heat it up.
3. Pour a large soup spoon full pencake pasta into the pan.
4. Fry one side to firm and light brown, then turn it around (with a knife) and fry the other side as well.
5. Repeat step 3 and 4 until no more pasta remains in your bowl.
Filling:
1. Put the grated apple into a pot. Scatter the Stevia powder on it and add honey to it. Mix it well.
2. On low temperature cook the apple for a few minutes to let most of the moisture gone.
3. Conditional: if there is lot of moisture, then let the apple mixture cool down and squeeze out the moisture with hand.
4. Fill the pencakes with the grated apples.
If you really like specialty, you can make vanilla pudding and add the cooked apples to it. Fill your pencakes with this filling.
