SOUR CHERRY „PISKOTA”
Ingredients:
6 eggs
6 spoon flour
5 pinch Stevia powder (or approx. 18-20 drops Stevia Fluid Nova)
1 spoon jam (if possible sour cherry jam)
1 package of phosphate-free baking powder
500g sour cherry (with seeds taken out)
Butter (to grease out the pan)

How to prepare:
1. Separate the egg yolks and whites, and mix the yolks with the Stevia powder (or Fluid Nova) well and add the jam to it.
2. In another bowl whip the egg whites until you can turn the bowl aside and it still does not come out of it.
3. In a third bowl, mix the flour and the baking powder.
4. Add the jam mixture to the flour, and carefully fold the whipped egg whites into it. (If you are not careful enough, the mixture will not rise when you bake it and you do not get the intended result.)
5. Pre-heat the owen to 180C.
6. Grease out a pan with butter and then add some flour to it and shake it around, so the flour sticks to the butter. Pour our the remaining flour.
7. Spoon the batter in the pan, and sprinkle the sour cherry over it.
8. Place the pan into the owen and bake it for about 25 minutes (after 25 minutes check the batter with a knife, if the knife comes out clean, the „piskota” is done).
9. Open the owen for a bit, let the „piskota” cool down, and then take out it of the pan.
